We’ve been enjoying some fab weather in Belfast over the past week. Sods law, as soon as I return to work after maternity leave, the weather is glorious! But at least I got to fully enjoy the warmer climes at the weekend. As soon as the sun is out and there are clear blue skies, us Northern Irish folk love to dust-off the BBQ and dine alfresco whilst we have the chance.
I popped into my local Marks and Spencer foodhall in preparation for a sunny weekend spent out in the garden. Their extensive new Spirit of Summer range is everywhere and I picked up some BBQ meat and some salads to enjoy with the family. There are lots of really exciting flavour combinations in the range, which is clearly inspired from food from around the world. I love M&S food and they are great at staying on trend with food and what people are into eating. The Spirit of Summer range will definitely appeal to those with exotic food tastes, and those who don’t want to put alot of effort into cooking! Once summer comes around, I want to spend less time in the kitchen and more time outside and this range is perfect for that. They also have a selection of pre-made lunch food like wraps, some small healthy snack packs, tubs of frozen yogurt and lots more besides.
I wanted to share with you the BBQ pork steaks and the shawarma chicken I had over the weekend. I served the BBQ pork with the accompanying red pepper dressing alongside fresh rocket salad and the most delicious combo of lentils, giant couscous and goats cheese. I served the shawarma style chicken thighs with garlic mayo drizzle and mango pickle sauce alongside a rocket salad. chipotle new potato salad and a mix of courgettes, beans, wheatberries and toasted fregola. This was probably my favourite meal of the two as I’ve never eaten shawarma, which is a middle eastern dish, nor have I had wheatberries or fregola. I love trying new foods and I’d definitely buy these dishes again from M&S. I also picked up a honey and ricotta cheesecake for Phill and I to enjoy. It’s small and sweet and perfect for summer evenings with a glass of wine.
